1 1/2-2 lb. fish fillets (flounder, roughy, crappie, etc.)
1 lg. onion 1 lg. bell pepper 1 (16 oz.) can Italian style tomatoes 1 (8 oz.) can tomato sauce 3 med. zucchini, sliced 2 tbsp. vegetable oil 3 c. cooked rice Preheat oven to 375 degrees. Saute bell pepper and onion in oil. Stir in tomatoes and sauce. Simmer 15 minutes. Wash fish. Place in baking dish. Arrange zucchini slices over fish. Spoon tomato mixture over all. Season to taste. Bake uncovered 20-25 minutes. Serve over cooked rice. Serves 4-6.
